Free Inquiry Week 2: A Sweet & Simple Start

The first week into my vegan baking adventure!

This week I decided to make a vegan chocolate pudding! It was honestly super simple and tasted delicious – there is no way anyone would be able to tell it was vegan! The “secret” ingredient for the base of the pudding was sweet potato, and the steaming of this was definitely the part of the recipe that took the longest. It was nice to ease into this experience with something super simple, although I am definitely looking forward to getting into some more complicated recipes. I think this would be a great recipe to make with kids, as it is simple, fast, and delicious!

I don’t really have too many takeaways from this first initial experience, but the one thing I will say is that vegan alternatives can be pricey! So far what I am seeing when I read vegan recipes is that they also tend to be “refined sugar free” and so they use maple syrup for the sweetness instead of regular sugar. Don’t get me wrong, maple syrup is great, but it is also SO much more expensive than regular sugar. While I understand why people may want to stay away from refined sugar, I wonder if there would actually be much of a taste difference in the recipes if I was to use regular sugar instead of maple syrup? If I am going to be continuing on this baking adventure, then I think I may need to be making this slight alteration to some of the recipes. With that being said, my initial look into using sugar as a substitute for maple syrup makes it seem as though it isn’t as simple as it may sound, specifically due to consistency and sweetness. I am going to do some more digging into this and report back next week – or if anyone reading this has any knowledge/suggestions, I would love to hear them!
