This week I got to meet my practicum class for the first time which was lovely and exciting! It also really made me go “oh this is real!” My mind got spinning with all the things to do prior to that point and how busy practicum is likely going to be. So, I thought that baking some muffins that I could freeze and then pull out throughout practicum would be a great thing to do! Home-made healthy snacks and less stress? Sounds like a perfect combination to me!

I have followed a Vancouver vegan influencer/blogger on Instagram named Erin Ireland for a while now, and I always find that she gives some of the best suggestions for vegan baking ideas. Over the weekend she shared her favourite healthy breakfast muffins, also called “Morning Glory Muffins” and so I saved the recipe and decided to try it out. I tried one of the muffins (don’t worry the rest are in the freezer) and they tasted great! What drew me to the recipe was the good (and simple!) ingredients it used. There was nothing funny or difficult to buy, these are just solid healthy muffins with good ingredients. A few of the items that I have continued to find quite consistent in vegan baking that were prevalent in this recipe too were ground flax for flax eggs, coconut sugar, and coconut. These are some staples to keep in mind if you are thinking of doing more vegan baking.

What I love about this recipe is how versatile I can see it being. What I mean by this, is that the recipe calls for raisins and coconut, but I think these ingredients could easily be swapped out with whatever your favourite muffin additives are. For example, extra chunks of apple would probably taste delicious if raisins weren’t your thing. I always love finding recipes which can be adjusted to suit all sorts of taste buds!

This was a nice change to the recipes that I have done previously, most of which have been very dessert-like! Unfortunately, I don’t have any pictures to show of my process or the final product, and the bag of muffins in my freezer probably wouldn’t make the cutest picture, but check out Erin Ireland’s recipe to see what they look like!
