This week I made Vegan Funfetti Cupcakes! I wanted to try out some classic childhood recipes and see if they tasted any different veganized – spoiler alert, they absolutely didn’t! I tried one of these cupcakes and it totally brought me back to an elementary school birthday party. I used Minimalist Baker’s recipe, and it was very easy to follow and didn’t require any ingredients that I didn’t already have on hand.
